Goya Champloo – Okinawa

“Champloo” is a dialect of Okinawa, meaning “to mix”, it is a dish which stir-fried tofu and various ingredients. Goya is said to be “the king of summer vegetables”, and the goya contains a lot of vitamins. It is said that one of the reasons for longevity in Okinawa is goya.
