Rafte – Okinawa

"Rafte" is a dish of pork stuwed well with brown sugar, soy sauce, awamori until they are very soft.

During the Ryukyu Dynasty, a Chinese pig cook "Tong Porro" was instroduced, the Ryukyu King at the time was very fond of it, it became a dish of the court dish.

The characteristic of rafte is to use Okinawa's sake "Awamori" during cooking.
